San Barnaba is the new project of Roberto and Giovanni Pasquero together with Francesco Rocca, son of Bruno Rocca, based in Serralunga. Their Pelaverga comes from Verduno, the only place where this rare and aromatic variety truly thrives. Fermentation is with native yeasts in barrique, followed by élevage in cement to preserve lift and freshness. The wine is bottled unfined and unfiltered, with low sulfur. The result is a bright, finely etched Pelaverga that delivers red berry fruit, spice, and a delicate, savory finish—a transparent and gastronomic take on one of Piedmont’s rarest grapes.
