Practicing organic; stringent grape selection in search of perfectly ripe grapes.
Vinification: 12 to 24 hours of settling without enzymes before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels with frequent lees stirring and regular topping up. Partial malolactic fermentation.
Aging: Eight months oak aging. No fining and light filtration, disgorgement with dosage liqueur vinified in barrels.
Production: 1,200 bottles
Notes
The generosity of the Cramant terroir is clearly evident in this cuvée. The nose reveals brioche and buttery aromas, with subtle notes of pear and peach. On the palate, the creamy and consistent texture is accompanied by flavors of autolysis and brioche, leading to a taut and saline finish.
