100% Carricante from vines more than 70 years old. Manual harvest of whole bunches into small crates. Grapes were crushed, destemmed, and pressed. Fermentation was spontaneous with indigenous yeasts in stainless steel. Wines were fermented dry, racked, and aged for six months in stainless steel. A small amount of sulfites were added only at bottling.
