50% Garnacha, 35% Carignan and 15% Zinfandel
From the Ernesto Collin’s vineyard. The 40-year-old vines are situated 300 meters above sea level, farmed without irrigation and rooted in sandy soil.
After hand harvesting the grapes, the Garnacha was fermented whole cluster and the Zinfandel & Carignan get destemmed and fermented, all with wild yeasts. The wine then gets pressed, blended and aged in stainless steel. Bottled unfined, unfiltered with no added SO2.
