Damien and Coralie Delecheneau craft Ad Libitum as a bright, drink-now Touraine rouge blending Gamay, Côt (Malbec), and Cabernet Franc from clay-silex and limestone parcels around Amboise. The fruit is hand-harvested and fermented with native yeasts; the Gamay sees a gentle semi-carbonic maceration while the other lots are infused with soft pump overs to keep extraction fine. Élevage is in stainless steel and cement to preserve freshness, and the wine is bottled unfined and unfiltered with minimal sulfur. The 2023 is juicy and lifted, showing red cherry and blackberry with violets, subtle spice, and a clean, stony finish—ideal slightly chilled.
