After hand-harvest, the base wine undergoes spontaneous fermentation in oak barrels, drawn from strictly organic and biodynamic farming practices.
This Extra-Brut bottling (~2 g/L dosage) spends 24+ months on lees before disgorgement (early 2024), producing mousse that is fine and persistent with electric tension
