VITICULTURE: Practicing organic; manual harvest and stringent grape selection
VINIFICATION: Direct press and selection of the first juices; cold settling for 12 to 24 hours without enzymes, then the juice is put into barrels; fermentation in barrels, demi-muids and foudres.
AGING: 8 months oak aging with partial malolactic fermentation; minimum 40 months of ageing in bottles and minimum 3 months after disgorgement, no fining and light filtration, disgorgement with dosage liqueur vinified in barrels. Dosage 2g/L; disgorgement November 2022
NOTES: Pale yellow tinged with faint green hues, the initial aromas are addictive and complex with notes of jasmine, lemongrass and pear. The palate is broad, yet fine-grained with an intriguing smokiness and very persistent mineral finish. Serve in a large glass.
