Traditional direct pressing on stainless steel troughs, spontaneous natural fermentation, aging on lees without racking in barrels for at least 11 months. The perpetual reserve was initiated in 2017 according to the same vinification principles, it has been enhanced every year since. Aging in bottle. July or August without fining or filtration Blend of wines from 2 to 3 harvests to which is added the perpetual reserve of chardonnays from the plot.
Gold in color, a discreet wine at first glance whose breadth and complexity are revealed on the palate, leaving a saline finish of sea spray on the lips.
