Guillaume Gallois works full-time at Bollinger and has only just begun to make andcommercialize his own wines from his own vines. His non-vintage Brut bottling of “Préface” is made from a cépages of sixty percent chardonnay and forty percent pinot noir grown in Vertus. This release is from the base year of 2022, but Guillaume decided to use fifty percent reserve wines for this release from the perpetual reserve solera he started for this cuvée in 2015. Seventy percent of the vins clairs are fermented and raised in stainless steel tanks, with the balance in old barrels. Consequently, seventy percent of the blend went through malolactic for this bottling. It was finished with a dosage of 7.5 grams per liter, but with its fine spine of acidity, seems drier than that. The bouquet is excellent, wafting from the glass in a mix of pear, apple, hazelnut, a fine base of chalky soil tones, dried flowers, gentle smokiness and a very discreet touch of buttery oak. On the palate the wine is deep, full-bodied, crisp and complex, with a lovely core of fruit, fine soil signature, elegant mousse and a long, impeccably balanced and vibrant finish.
