• Fermentation: Spontaneous. Stainless steel.
• Skin contact: Crushed and semi carbonic maceration for 7 days.

Part whole cluster, topped crushed. Spontaneous fermentation in stainless steel. Light manual punch downs once a day, not much movement. Shorter but more aerated pump overs during the most active part. Fermentation was complete in just over two weeks, and malolactic fermentation began a few days after. The wine rested in neutral barrels for 6-7 months integrating the blend. Bottled unfiltered, unfined, unstabilized with 5 ppm SO₂ at bottling. 

This is a good example of Baja California wines. Deep, layered, expressive with big character. The field blends expresses their differences and alliances with a bright and juicy red fruit notes, enhanced by salinity from our hydricstressed vines. This gives an energetic wine, with a lot to say in terms of aromatics, that keeps you involved while still being a versatile drink and a great pair for savory food. The spectrum moves from fruit-forward to spiced to gently smoky, with a persistent finish that evolves in the glass like a good conversation that runs long into the night.
