- Terroir: From Le Chétillion de Haut in Mesnil-sur-Oger. Pure iodized chalk with colluvial limestone-chalk formations.
- Viticulture: Organic (Ecocert, 2022), biodynamic methods (since 2021).
- Vinification: From a selection of the best grapes from Chétillon de Haut, ambient yeast primary fermentation and full malolactic conversion, aged for 10 months in 300 and 600 L barrels, bottled and aged for another 42 months on lattes under natural cork, no fining, no filtration, no added SO2.
