From a tiny, 3.6-hectare, organic estate newly established in 2020 by Benjamin and Caroline Guilbert (with partner René Gillet), this Savigny-les-Beaune comes from multiple clay-limestone vineyards in the Côte de Beaune where each parcel’s identity is treated individually in the vineyard and cellar. The domaine farms sustainably with high trellising and biodiverse soil-care practices, hand-tending plots and often working by hand or horse on select échalas sections to enhance soil health and expression.
In the cellar, fruit is fully destemmed, gently infused, and gently pressed with long macerations and traditional Burgundian élevage (18 months in mostly neutral barrels, slow racking and gravity bottling), allowing the wine’s site core to shine.
