Organically farmed Chardonnay from two high-calcium plots—Bel‑Air (southern exposure, stony clay) and Clardys (white marls over fossil-rich limestone)—located in Courgis, just outside Chablis. Hand‑harvested and gently whole‑cluster pressed, the must undergoes native yeast fermentation in used barrels (500 L foudres and 225 L older oak) with full malolactic conversion. Aged 12 months on fine lees in wood (no bâtonnage), no filtration, bottled with a touch of sulfur.
