A purposeful experimentation by the Chablis-based duo: a white blend combining Sauvignon Blanc from Saint-Bris, skin-macerated Aligoté, and Chardonnay (plus a small portion of Sauvignon Gris). Grapes are hand-harvested and vinified separately: Aligoté sees approximately 15 days of skin contact, Sauvignon components undergo both direct press and maceration, while Chardonnay is pressed and fermented in barrel. All fermentations use native yeasts, with aging conducted across a mix of amphora, foudre, and oak, then blended and rested in tank for about 6 months . Bottled unfined and unfiltered, with minimal sulfur.
