Sourced from ~1 ha of 40‑year‑old Pinot Noir planted on thin, limestone‑rich clay‑silt soils. Hand‑harvested clusters undergo whole‑cluster vinification with cold pre‑fermentation maceration in wood, followed by gentle pigeages and pump‑overs. Aged 15 months in 100% new French oak barrels, bottled unfined and unfiltered.
Amélie and Denis Berthaut preserve this cuvée as a homage to their grandfather—‘Les Hervelêts’ delivers refined structure and site clarity, showcasing serious pedigree and cellaring potential.
