A single vineyard at 400–450 m altitude on a steep limestone‑clay slope in the Hautes‑Côtes, this Chardonnay represents Colin‑Morey’s bold exploration of cooler sites just above the Côte d’Or. Vines planted around 2015 deliver early, mineral‑driven fruit.
Fermentation begins with a light crush and no settling, followed by ~14 months in 350 L demi‑muid barrels (just 10% new oak), then ~3 months in stainless steel before bottling. Indigenous yeast fermentation, unfined, unfiltered, and low—or no—sulfur throughout.
