From the cool-elevated vineyards of Mount Macedon, ‘Larderdark’ is Chardonnay planted on basalt-rich soils 550 m above sea level, offering brightness and tension uncommon for Australia. The fruit is hand-picked, whole-cluster pressed, and fermented using native yeasts in a mix of stainless steel and older barrels; élevage runs about ten months on fine lees with minimal new oak, and the wine is bottled unfined, unfiltered, with low sulfur.
