old-vine parcels in the heart of Les Suchots—between Echézeaux and Romanée-Saint-Vivant—on very shallow limestone with clay and abundant stones; farming is organic in practice. The fruit is hand-harvested, strictly sorted, and 100% destemmed after ~8–10 days of cold maceration, then fermented 10–20 days with indigenous yeasts and gentle cap work, with no SO₂ before malolactic. Élevage runs 15–18 months in French oak with roughly two-thirds new barrels, and bottling is done without fining and with only a light filtration.
