Certified Organic. Dufour’s signature Champagne from his home vineyards, comprised of three different vineyard sites in the Vallée de l’Ource, with the majority of fruit coming from around Landreville (80%) and the rest Celles-sur-Ource (10%) and Essoyes (10%). Soils are calcareous clay (from Jurassique Supérieur). 60% Pinot Noir, 30% Chardonnay, 10% Pinot Blanc. 85% of the wine is base vintage 2022, with 35% coming from a réserve perpétuelle containing vintages 1982-2021. Indigenous yeast ferment of the vin clair, malolactic fermentation completes, followed by eighteen months aging on lees in a combination of tanks (75%) and barrels (25%). Bottled with liqueur de tirage in February of ’24 to prompt secondary fermentation; disgorged May ‘25. <2g/L dosage, extra brut level.
