Prior to 2023 the grapes came from the Maconnais and from the Côte du Couchois. Côte du Couchois: 0.30 ha (0.74 ac), planted in the 1970s, iron-rich soil over granite bedrock.

- Vine Age: Mâconnais: planted in the 1970s, Ladoix: 30 and 70 years old (as of 2024)
- Terroir: Mâconnais: from the village of Plottes, declassified Mâcon villages, 10 minutes southwest of Tournus, limestone bedrock. Ladoix: from two parcels, clay-limestone.
- Viticulture: Organic (not certified)
- Vinification: The grapes from the Maconnais are picked a week before the Ladoix and are put in tank, after which the grapes from Ladoix are picked and are layered in between the already-fermenting Maconnais grapes in a separate 55 HL tank. 100% whole-cluster, 10-14 day ambient yeast fermentation and semi-carbonic maceration in steel or wood tanks, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, vertical press, aged for 10-22 months in used barrels, no fining or filtration, no added SO2 since 2024, might add exceptionally (less than 20 ppm).
