Sourced from vineyards with an average age of 25 years and more than 40 years for the parcels that are selected for the elaboration of the red wine. Multiple parcels, varied exposure.
Clay topsoil, chalky subsoils
Farmed in a sustainable manner and influenced by ecological methods with a strong emphasis on biodiverstiy.
Blend of 30% macerated Meunier, 60% white wine (immediately pressed Meunier) and 10% still red Meunier. Grapes are picked up by hand when fully ripen. Alcoholic fermentation takes place in in vats, foudres and barrels. Malolactic fermentation is partly made.
Ageing during 6 months and light filtration before bottling during the spring time; 6.5-8.5 gr/l dosage.
A rose Champagne that can begin with oysters and end with dessert. This is the same base wine as the Rose de Meunier but with just over twice the dosage. Elegance is the name of the game here, and value is apparent from the very first sip!
