Terroir: Clay-limestone soil, consisting primarily of blue marls dating back to the
Lias epoch.
Cultivation Method: Vines have been undergoing organic conversion for several
years.
Certified as being in organic conversion since late 2019.
Vinification: Hand-harvested grapes with a yield of approximately 30 hl/ha.
This is the king of grape varietiesâthe most quintessential choice for producing
the wines of the Jura region.
This wine is produced using the *sous voile* (under-veil) methodâmeaning the
barrels are not topped upâand it is from this very grape variety that the sublime
*Vin Jaune* is crafted.
Vinification occurs naturally in 228-liter oak barrels over a period of 3 to 4 years;
as the wine ages, an air gap forms within the barrel, triggering the development
of a veil of yeast on the surface that protects the wine from oxidation.
Fermentation is carried out using indigenous yeasts at low temperatures.
(No laboratory-cultured yeasts or additives are used).
Bottling is performed according to the lunar calendar, utilizing high-grade cork
stoppers.
Serving Temperature: Recommended between 14°C and 15°C.
