- Viticulture: Purchased grapes, organic and biodynamic (not certified), plowed by horse. All of the farming done by Catharina since 2022.
- Vinification: 50-80% whole cluster, ambient yeast fermentation in stainless steel with no added SO2, aged for 10-12 months in used barrels, minimal added SO2 after malolactic fermentation.
