Our first red is inspired by German and Austrian PiWi hybrid/vinifera blends, as
well as by Northern Rhone cépage ratios. 90% merlot from our friend Jon Viviano, a
farmer in Cutchogue, L.I. with a touch of Vignoles, an organically-farmed Finger Lakes
complex hybrid. Merlot macerated for three and a half weeks, partially whole-cluster,
with punch downs every other day. Vignoles saw direct-press and tank-fermentation;
one year in neutral oak, followed by one year in bottle. Minimal sulfur added at press.
