Vinification:
2023: Grapes are hand-harvested and whole cluster macerated for two weeks before being pressed directly into old French oak puncheons, where the wine sits undisturbed for 11 months until bottling.
2022: Whole cluster foot-tread and macerated for one week with daily hand punch-downs. Pressed directly into 1 older French oak puncheon and 1 stainless tank. SO2: 20ppm at Crush
Notes: Lychee, white flowers, and citrus peel.
