- Terroir: Catharina owns the very old vines in Pommard (representing a half barrel); the remainder is located in Volnay (comprising about 4 barrels).
- Viticulture: Biodynamic
- Vinification: ⅓ de-stemmed but with skin contact for 5 days in 50L crates; ⅔ directly pressed as whole clusters in basket press. Indigenous yeast fermentation with no sulfur added until after malo. Aged for 6 months in 350L older oak barrels.
