Certified Biodynamic. Chenin from 1 plot: Les Cocus – Faye d'Anjou – 1968 (north-east/south-west). Soil: Clay on schist. Shallow soil, approx. 30 to 40 cm. schist. Manual harvest, slow pressing. No clarification. Racked to barrel during fermentation. Vinification without inputs of any kind. Natural and total malolactic fermentation. Vinification and maturation in neutral 500 l. casks for 12 months. Bottled without filtration. Volcanic sulfur (10 mg/l) can be added one month before bottling depending on the vintage.
