Terroir: From a small site (0.8 ha) planted in the 1990s with eastern exposition, 320-330m altitude. Kimmeridgian limestone soil, marl-limestone bedrock. Dramatic difference in temperature from day to night.
Viticulture: Organic (AB), biodynamic methods. Guyot Poussard pruning.
Vinification: Some pressed immediately with a percentage of the fruit macerated on the skins for a few days. Ambient yeast fermentation. Méthode ancestrale, bottled with residual sugar. Disgorged after 12 months on lattes. No fining, no filtration, no added SO2.
