From the historic Le Chapitre lieu-dit on the limestone-marl slopes above Chenôve, this Pinot Noir is farmed for low yields and picked by hand. Fermentation is spontaneous with a meaningful portion of whole clusters and gentle daily pump overs, aiming for perfume over extraction. Élevage runs close to two winters in mostly used barrels, and the wine is bottled without fining or filtration with minimal sulfur.
