Soil: Clay-limestone
Exposure: East - Southeast
Vinification: Manual harvest, no added yeasts or enzymes, very rarely any bâtonnage, no racking, cold and very slow fermentations (late-occurring Malo)
Maturation: 18 months (20-25% new oak), followed by another four month in tank prior to bottling without fining or filtration
