Ulli has always been curious, and quirky. Both as a f*** you to the German laws that be outlawing Red Wine making, and his curious nature of what is possible and what would grow (remember he got his Doctorate in Plant Biology), he planted Pinot, Cabernet, Merlot and Sangiovese in the 1980s. Historically, the grapes would never ripen and he would pick them and add them to Rosé - yet now with the warming world he is the past few years not only produced but made excellent Cabernet. Aged in Barriques from 2-5 years of age. The Cabernet is planted in Alfer Hölle, on Red slate and clay as well as in Himmelreich, with Blueslate (vom Berg meaning from the hill or mountain). Partially destemmed, fermented in open top fermenter undergoing light punchdowns. Really - you must try this wine and you too will be a bUlliever. - VB
