VINIFICATION Harvest: Manual harvest; mid to late October
Elaboration: Spontaneous fermentation with indigenous yeasts activated
by pied de cuvee, followed by maceration on the skins for over a month.
Aged in terracotta amphorae for 18 months, then 18 months in bottle
before release. No added sulfur, no filtration or fining.
WINE Roasted cherry, wild strawberry, fennel, juniper. Mineral and expansive on
the palate. Moderate tannins with bright acidity and a long finish.
