This cuvée comes from multiple small parcels in the Côte de Nuits classified as Bourgogne Côte d’Or, planted to old-vine Pinot Noir on shallow clay-limestone soils. The domaine farms biodynamically with very low yields, and all fruit is hand-harvested and rigorously sorted. Fermentation is carried out with indigenous yeasts in wooden vats, using gentle extraction and a proportion of whole clusters depending on stem maturity in the vintage. Élevage takes place in French oak barrels with a restrained percentage of new wood, and the wine is bottled without fining or filtration
