From the southern slope of Volnay’s famed “Les Santenots-du-Milieu” (on clay-limestone above Meursault), this 100% Pinot Noir is farmed organically and harvested by hand. Fermentation is native-yeast with 50% whole clusters (in 2022), followed by élevage of 18-22 months in barrel (1/3 new oak) before bottling with minimal sulfur.
