A jewel among the holdings transferred from Jacob to Forey after Jean-Michel’s retirement, this cuvée comes from a miniscule sliver of old Pinot Noir in the village-level portion of Aux Echanges (which spans both village and premier cru turf), nestled between premier crus Aux Beaux Bruns and Aux Combottes. Only two barrels are produced, one of which is new, and the finished wine shows remarkable concentration and depth, its quietly powerful structure slathered with beguiling Chambolle fruit and spice.
