VINIFICATION Harvest: Manual harvest; mid September to mid October
Elaboration: Spontaneous fermentation with indigenous yeasts activated
by pied de cuvee, then maceration on the skins for about 48 hours, followed
by several more hours with Nerello Mascalese pommace. Aged in stainless
steel for 6 months
WINE Dark red cherry with juicy core of fruit. Stewed strawberry, with
undertones of juniper bush, dried oregano and orange peel. Saline on
palate with bright acidity and moderate tannin structure.
