soils. Organic / sustainable, BIO certified.
Vine Training System: Low sapling
Exposure: West, 750 m elevation

VINIFICATION Harvest: Hand harvested late September
Elaboration: Whole bunch fermentation with spontaneous yeasts.
Maceration for 15 days. Soft pressing. Matured 18 months in 500 Liter
barrels. Aged in bottle at minimum of 6 months before release.
WINE Ripe strawberry, stewed ripe red cherry and red plum. Plush and round
with a striking granitic backbone typical of high-altitude granitic parcels.
Plush yet energetic.
