Los Arquitones is the neighborhood where Guzmán’s family is from, a hike outside of modern-day Villanueva into the Sierra. There are no vineyards nowadays in Los Arquitones, but Bárbara and Guzmán make still and sparkling rosés in homage to his family’s roots. This rosé pet nat is 100% Garnacha from two small 70-year-old, organically-farmed vineyards planted on granitic sandy soils at 900-950 meters altitude in the neighboring village of Navatalgordo. The grapes were harvested in early September, destemmed, pressed directly, fermented with native yeasts, then bottled before fermentation completed in order to spur bubbles in the ancestral method, as fermentation finished in the bottle. Bárbara and Guzmán believe a full year on the lees is required to achieve a refined bubble, and they disgorged the bottles on December 10th, 2022. Disgorging is rare in pet nat production, but Bárbara and Guzmán believe it is vital to the clearest, fullest expression of the wine.
