Exclusively Rabigato, from vineyards located in the highest regions – about 500 m
– which provides a slow maturation and, therefore, the production of high quality
grapes.
After the production of the wine base, made with a minimalist technology (in a
way to allow the expression of the grape and terroir) it was held a second alcoholic
fermentation in bottle. The fermentation´s temperature in basement was in the
order of 14 to 15 º C and after its conclusion the wine stood in contact with the
yeast culture for one year – to improve the creamy effect and smooth texture in the
mouth as well as the aromatic complexity.
