- Vinification (Crémant): Whole cluster pressing at low pressure, separation of first press and end-of-press must, ambient yeast fermentation, blocked malolactic fermentation, briefly aged in stainless steel tank, bottled in spring, further aging on lattes for 30 months, low dosage.
