Appellation.
Cultivation Method: Vines have been undergoing organic conversion for several
years.
Certified as in Organic Conversion" since late 2019.
Vinification: Manual harvesting with a yield of approximately 35 hl/ha.
Fermentation: Natural fermentation (using indigenous yeasts) at low
temperatures, with daily pump-overs. Aged in oak barrels for over 12 months.
