PRODUCTION ZONE From 2.5 ha of vineyards: 80% from Solicchiata (North), 20% from Milo

VINEYARD Names: Milo, Contrada Praino, and Solicchiata, Contrada Grasa
Age of Vines: 40 – 90 years old
Soil Profile: Volcanic. On the eastern side, sandy volcanic soils. On the
northern side, sandy volcanic with a high concentration of stones
Vine Training System: Bush vines -“Albarello etneo“
Exposure: Northeast — east
Yield: 1300 bottles
VINIFICATION Harvest: Manual harvest; mid October
Elaboration: Spontaneous fermentation with indigenous yeasts activated
by pied de cuvee, followeb by maceration on the skins for over a month.
Daily punchdowns until fermentation ends. Remains in stainless steel for
12 months and 3 – 6 months in bottle before release. No added sulfur, no
filtration or fining.
WINE Bright red and black cherry, wild strawberry, fresh and dried
Mediterranean herbs like bay laurel, oregano and juniper. Bright acidity
and moderate tannins with a fleshy core of fruit.
