Between Romanée-Saint-Vivant and Echézeaux, the Pinot sees a seven-day cold soak and 16-day native ferment with early pump overs and light punch-downs, 50% whole clusters, then 14 months in barrel and 2 months in stainless (one-wine barrel used), a slow lenticular filtration, and bottling at ~20 mg/L free SO₂, with ~300 bottles produced.
