Soil Profile: On the eastern side, sandy volcanic soils. On the northern and
southern side, sandy volcanic with high concentration of stones
Vine Training System: Bush vines -“Albarello etneo,” and guyot
Exposure: Northern, Southern, Eastern exposure
Yield: 1600 bottles
VINIFICATION Harvest: Manual harvest; End of September to mid October
Elaboration: Grapes are collected, and spontaneous fermentation with
indigenous yeasts activated by pied de cuvee, then maceration on the skins
for 1 week. Fermented in enological plastic tank, then into stainless steel
tank for malolactic fermentation. Batonnage every week.
WINE Fresh citrus aromatics of meyer lemon, buddha’s hand, citron and
bergamot with a distinct saline finish. Bright acidity and pithiness with
a medium body.
