A singular, late-harvest Savagnin from organically farmed Jura parcels, with the 2009 fruit dried on clay mats (passerillage) to intensify sugars and aromatic compounds. Fermentation began spontaneously in barrel and—owing to extraordinary concentration—continued at a glacial pace for 12 years before naturally arresting. Bottled unfined, unfiltered, with zero added SO₂.
The result is a deeply textural, sweet-but-balanced expression: dried apricot, candied citrus, warm spice, and honeyed depth, all threaded by Savagnin’s innate acidity and a gentle oxidative shimmer. A rare, time-bent wine where every year of slow fermentation shows—meditative, layered, and genuinely otherworldly.
