40-year-old Chardonnay and Savagnin vines growing in the town of Lavigny on gray and white marl soils, this bottling is named after Francois’ grandmother. This wine is a delicate and graceful hybrid of winemaking styles in the Jura. A blend of 85% Chardonnay and 15% Savagnin, where the Savagnin is not topped off and ages sous voile for 3 months before blending with the Chardonnay in stainless steel tank, where comes together for 11 months.
