Sauvignon blanc has a truly unique character in the Willamette Valley, when farmed similarly to the other varieties more common in the region. It is intense and exotic having ripe guava and tropical fruit notes and a weighty and full mouthful of fruit. The extended daylight hours and UV light that the Willamette Valley receives during the growing season is responsible for the photodegradation of pyrazines and as such the variety delivers non of its characteristic grassiness. In fact, the variety ripens so fully here that we decided that it required the added fresh acidity that comes from heirloom clone Chardonnay. Together these varieties create a more engaging and harmonious white wine. 12.8% abv.
