Fun Facts:
Aurora (which means dawn in Italian) is also the name of a small and graceful native butterfly that's currently at risk of extinction. These can often be spotted in the vines and inspired the wine's name and label.
Winemaking:
Whole-clusters are direct pressed and left to settle for 30 hours. Natural fermentation taked between 15 - 20 days. The wine is then aged five months in stainless steel tanks.
