Grapes are pressed and enter into a cool fermentation that follows one night under refrigeration to help preserve the unique and delicate floral notes that are backed up by citrus aromatics. The wine is medium-bodied with bracing acidity and high-toned mineral notes rounded out by just enough richness and honeyed viscosity. Nice complexity and very food friendly.
