- Vinification
- The grapes are pressed and given 24 hours of cold settling. The wine then fermentes spontaneously with native yeasts in Slovenian foudre of 2000L and used French oak barrels of 500L for 10 months.
- Aging
- The wines are blended into stainless steel and aged on the fine lees in tank for 8 months.
- Production
- 4,000 bottles.
- Notes
- 2020 is the first harvest after changing to regenerative organic farming.
